Lots of interest in former Miller and Cook building

Keen interest in the former Miller & Cook building on Pearse Street, Mullingar has led to rumours as to who the next tenant will be.

Proprietor Mark Gavin says while there has been an enormous amount of in interest in the former Bank of Ireland building, which dates from the 1860s, he is holding out for the right venture – one that will enhance the town and follow the concepts created by Miller & Cook.

“We’re not in a position to comment but I can guarantee that we’re not in discussion with any low-price operators which I think people are concerned about,” Mark said.

“There has been great interest in both the upstairs and downstairs of the building, but nothing has been signed yet. The rumours are just that – rumours.

“It is a very big building and only when you see it emptied do you realise just how big it is, but I would like to see something that would follow in the concepts we created with Miller & Cook.”

The three-storey premises has 23 car parking spaces to the rear of the property and seating to accommodate 100 people.
Miller & Cook which operated a cafe, restaurant, bakery and deli, and achieved a Best Newcomer accolade at the Irish Restaurant Awards, closed in July after six years of business.

Mark said: “I promise that whatever is going in there next will be good for Mullingar on the whole. And we’re excited about the possibilities.”
