Egg-free white chocolate cookies

INGREDIENTS

1/2 cup butter

1/4 cup caster sugar

1/2 cup brown sugar

1 1/2 cups plain flour

1tsp baking powder

1tsp vanilla

1tbsp water

2tbsp veg oil

A cup chocolate chips

METHOD

Preheat the oven to 180 degrees Celsius.

Line two baking trays and set aside.

In a large bowl, beat together the butter and sugars until pale in colour.

Add in the flour and baking powder and mix well.

Add in the oil, water and vanilla and mix again.

Finally add in the white chocolate chips and stir well.

Take a tablespoon of the mixture and roll into a ball and place on the lined baking tray and repeat until all the mixture is used. Remember to leave room between the cookies as they spread out while cooking.

Bake for 10-12 minutes until golden.

Allow to cool for five minutes on the tray before transferring to a wire rack to cool fully.
