Ballinlough Castle on RTÉ'S Lords and Ladles

RTÉ One's Lords & Ladles visits Ballinlough Castle this Sunday.

Chefs Derry Clarke, Catherine Fulvio and Paul Flynn team up with Ballinlough Castle owners Nick and Alice Nugent.

Every year they host the Body & Soul Festival, but this week, Paul takes the reins in the kitchen, where he battles with a mid-18th century menu featuring delicacies such as ‘Cow’s Udder Forced’, ‘Marrow Pasties’ (that’s bone marrow, not the vegetable!), ‘Goose Pie’ and a mysterious dessert called a ‘Hen’s Nest’, featuring lots of calf’s foot jelly, and blancmange moulded in hollowed-out egg shells!

Catherine Fulvio visits Maperath Farm, near Kells, where Eoin Sharkey raises free-range geese and turkeys for the Christmas market and he shows Catherine how to pluck and gut a goose the old-fashioned way; collects a billy goat kid from Barba Goat Farm near Collinstown, where male goats are the natural by-product of a large dairy-goat herd; and attempts to hook a pike on the lake at the foot of Ballinlough Castle.

Derry Clarke enjoys a stroll around the grounds with Nick, learning about the history of the castle and also the work involved in keeping a place like this running, before Derry, the Nugents and their guests tuck in to the evening feast.
