Chef's Delight: Banana cake with frosting and walnuts

INGREDIENTS

350g /12oz Odlums Cream plain Flour

1tsp Odlums Baking powder

Pinch of Salt

125g/4 oz Butter

200g Caster Sugar

Two large eggs

Four medium Bananas (mashed)

60ml/4tbsp Buttermilk

For the Frosting

100g Icing Sugar (sieved)

400g Cream Cheese

200g of walnuts

200g of honey

METHOD

Preheat the oven to 180oC.

In a large bowl beat the caster sugar and butter together.

Then add the eggs one by one. Then add the buttermilk and bananas.

Now add the flour and baking powder and place into a greased cake tin.

Bake for 30 minutes.

While baking, make the frosting by combining the icing sugar and cream cheese and keep in the fridge.

Mix the walnuts and honey on a tray and toast until golden and crisp. Once the cake is cooked and cooled, then you can add the frosting. So layer it on top and top off with the walnuts. Enjoy.
