No churn mince pie ice cream

A WORD FROM THE CHEF

Here's a twist on a Christmas classic if you are looking for something a little different. It takes just 25 minutes to prepare and you can freeze it overnight. Merry Christmas everyone!

INGREDIENTS

(Serves six)

250ml single cream

150g condensed milk

1tsp vanilla extract

Three mince pies

For the Topping

100g raisins

20g butter

20g soft brown sugar

1tbsp of brandy (optional)

A pinch of mixed spice

METHOD

Place a 1lb loaf tin in the freezer.

In a bowl, whisk the cream until thick, to this add the condensed milk and vanilla and re-whisk.

Crumble up three mince pies and fold through the cream.

Spoon this into the loaf tin and place back in the freezer over night.

For the topping, place the butter, brown sugar and mixed spice in a pot and heat until the sugar is dissolved.

To this add the brandy and pour over the raisins and set aside until needed.

To serve, spoon the raisin topping over the Ice-cream and enjoy.
